Do you peel aubergines?

I've bought an aubergine for the first time and i don't know whether i'm meant to peel the skin off before i cook it or it's meant to be left on??

Any advice on the matter would be mucho appreciato

You shouldn't peel them but you should soak them sliced in water first after (salted water I think). It gets rid of the bitterness.

Right, i can confirm that the skin can stay on the aubergine when cooking, it was well nice!! I didn't get the salt water info until afterwards though but it wasn't a problem

And, i have to say, aubergines are top to hold, i don't know what it is but they feel ace, i was holding it for about 10 mins before i chopped that baby up
